@chef.joe.sasto made these incredible striped egg yolk and ricotta ravioli! Watching them be made is absolutely mesmerizing! 😍

To get these stunning stripes, he used cocoa dough inlaid over egg dough. 
Hear from @chef.joe.sasto how it was done : “One of the tricks I found when striping multi-colored doughs - is to roll the dough to be inlaid on top one size thinner than the other dough, it helps with the lamination process. Going slow and only moving down one size at a time in the sheeter keeps the dough consistent and not over-stressed.

Water in a spray bottle helps add just enough moisture to let the dough stick to itself without adding too much. Pre-adhereing with a rolling pin, and trimming the edges before rolling back into the sheeter, helps keep everything in place before handling the sheet.

Piping a ring of ricotta as a base before placing the egg-yolk, and then piping the rest of the cheese around, acts as a nest and a layer of insulation when cooking the pasta. Invert your ring cutter to seal the center filling around the yolk, before cutting with the sharp edge. If you don't have a ring cutter, an empty glass or coffee mug wold work great!

My favorite basic pasta dough recipe is 100g 00 flour for each whole egg + a pinch of salt, and a good 20 minute knead, and you can be making pasta tonight!”
